Baby Blue Salad~

Adapted from Southern Living

1 (5-6 ounce) bag mixed spring salad greens or baby spinach
2 ounces crumbled blue cheese
1 small can mandarin oranges
1/2 pint fresh strawberries, quartered
1/2 cup Sweet and Spicy pecans
Balsamic vinaigrette

Toss together first five ingredients in salad bowl.  Toss with balsamic vinaigrette to taste.

Dressing:

1/4 cup balsamic vinegar
1 1/2 tablespoons Dijon mustard
1 1/2 tablespoons honey
1 clove garlic, minced
1 small shallot, minced
dash salt
freshly ground black pepper
1/2 cup olive oil

Sweet and Spicy pecans:

2 tablespoons sugar
1/2 cup warm water
1/2 cup pecan halves
1 tablespoon sugar
1 1/2 teaspoons chili powder
Dash of cayenne pepper 

Stir together 2 tablespoons of sugar and warm water till sugar dissolves.  Add pecans and soak 10 minutes.  Drain.

Combine 1 tablespoon of sugar, chili powder and cayenne.  Add pecans and toss in mixture.   
Place in a single layer on a lightly greased baking sheet.  Bake at 350º for 10 minutes...stirring once at the halfway point.
