Savory Bean and Spinach Soup

Serves 6

2 tablespoons vegetable oil
1/2 onion, diced
2 cloves garlic, minced
1 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon black pepper
4 cups vegetable broth
1 (15 ounce) can tomato sauce
1/2 cup converted rice
1 (15 ounce) can white beans, drained and rinsed
6 cups spinach

1) Heat oil in a medium-sized pot. Add onions; cook until translucent. Add garlic, basil, salt, and pepper; cook until fragrant.
2) Add vegetable broth and tomato sauce. Bring to a boil.
3) Add rice and reduce heat to a simmer. Cover and cook 12-15 minutes, stirring occasionally, until rice is soft and cooked through.
4) Add beans and spinach. Cook for 5-7 minutes, until spinach is wilted. Enjoy!
