Greek Rice Pilaf

Serves 6 as a side dish


2 tablespoon olive oil

1 onion, diced

2 cloves garlic, minced

2 teaspoons oregano

1/2 teaspoon dried dill

1/8 teaspoon black pepper

4 cups spinach, chopped

3 tablespoons lemon juice

4 cups cooked rice

1 cup peas, fresh or frozen

4 ounces feta, crumbled


1) In a large skillet, saute the onion in oil on medium heat until they soften and become translucent.

2) Add the garlic, oregano, dill, and pepper and saute until fragrant.

3) Stir in the spinach, lemon juice, rice and green peas.  Cover and cook for 3-4 minutes, stirring occasionally.

4) When spinach is wilted and rice is hot, top with feta and serve immediately.  Enjoy!
