The great British dessert is a wonderful thing: sweet, gooey and covered in custard. Sadly, however, it is a mass caterer's nightmare, as some poor soul has to do the washing up - and if it got burnt onto the bottom of the tin, so much the worse. So, much as I love traditional pudding, my usual strategy when catering for large numbers is to avoid taking the dessert anywhere near the oven.
