Southwestern Chicken with Bean Sauce, Holly Clegg's

Makes 6 to 8 servings

For casserole:
Skinless, boneless chicken breasts
1 (16-oz) can fat-free refried beans
1 cup chopped red onion (she uses 1/2 cup)
1 (16-oz) jar salsa

For serving:
1 cup shredded reduced-fat sharp Cheddar cheese
1/4 cup chopped green onion 
Light sour cream (we add) 
Guacamole (we add)

Preheat oven to 375ºF.

Place chicken breasts in 2-quart oblong baking dish coated with nonstick cooking spray.

Spread the beans to cover the top of the chicken. Sprinkle with the red onions. Pour salsa evenly over the top. Cover with foil, and bake for 80 minutes, or until chicken is done.

Sprinkle with the cheese and green onion, and serve warm. Offer sour cream and guacamole at the table.
