Penne Mozzarella

1-2/3 cup uncooked penne
3 Tbsp olive oil
1 pint grape tomatoes
1 tsp minced garlic 
1/2 cup skim mozzarella, cubed
1-1/2 cups bagged baby spinach
Reserved 1/2 cup pasta water

Cook pasta according to pkg instructions. Ladle out 1/2 cup of the boiled pasta water and set it aside. Strain pasta into medium covered skillet.

In a separate skillet, warm the olive oil. Add tomatoes and garlic, and saute over medium heat until soft, about 15 minutes. 

Add the cheese, spinach, and reserved pasta water. Remove from heat.

Toss with the pasta, then cover with a lid until the cheese melts.
