Cream Cheese Bars, Lucy's (Chess Squares)

Makes about 24 bars

Crust
1 pkg yellow cake mix
1 stick butter (not margarine)
1 egg

Filling
1 can coconut
1 (8-oz) pkg cream cheese
1 box confectioner's sugar
3 eggs
1 tsp vanilla 


Directions
Preheat oven to 325ºF.

Mix the cake mix, butter, and one egg until crumbly. Press batter into 9- x 13-inch pan, working from the center. Make the crust a little higher around the edges. 

Sprinkle the coconut on top.

Mix the cream cheese, confectioner's sugar, three eggs, and vanilla; beat well. Spread cream cheese mixture on top of the coconut.

Bake at 325ºF for forty-five (45) minutes.

Cool before slicing into bars (or squares).
