Chicken Salad

(Serves 4) 1 roasted chicken, breasts removed and roughly chopped 1/3 cup finely diced white onion 2 ribs celery, finely diced 1/4 cup toasted pine nuts 1/2 cup mayo 1 tsp mustard Salt, pepper and garlic salt to taste

1. Place diced onion and celery into a medium bowl. Add pine nuts. Set aside.

2. Place chopped chicken into a food processor. Pulse until you've reached desired consistency (I like mine pretty fine).

3. Add chicken to bowl. Stir in mayo and mustard. Season with garlic salt, regular salt and pepper, to taste.
