Blueberry-Lemon Greek Yogurt Bread

Ingredients:
  1. 1-1/2 cups + 1 tbsp all purpose flour set aside
  2. 2 tsp baking powder
  3. 1/2 tsp salt
  4. 1 cup Greek yogurt
  5. 1 cup sugar + 1tbs for the top
  6. 3 large eggs
  7. 1 tsp lemon zest (from 1 lemon)
  8. 1/2 tsp vanilla extract
  9. 1/2 cup applesauce (or vegetable oil - applesauce is much healthier!)
  10. 1 large cup blueberries, fresh or frozen
  11. Directions:
  12. 1. Preheat oven to 350º and grease a 9x5 baking pan
  13. 2. Mix together all dry ingredients, except the 1tbs of sugar and flour, in a bowl
  14. 3. Beat eggs with the lemon zest, vanilla extract, applesauce, and greek yogurt
  15. 4. Slowly fold in the dry ingredients.
  16. 5. In a seperate bowl, mix the blueberries with 1tbs of flour
  17. 6. Add blueberries in with the other engredients - saving a few for the top for presentation
  18. 7. Pour into the baking dish and cook for 55mins to 1:10 hour, or until a tooth pick comes out clean
  19. **** halfway through cooking, sprinkle the remaining sugar on the top to give it a nice sugary crunch
  20. 8. Remove once cooked. Let it sit in the pan for 5-10 minutes then remove and transfer to a cooling rack
