Mini Pineapple Coconut Angel Food Cakes

Ingredients:

  • 1 box (16 Oz. Box) Angel Food Cake Mix
  • 1 can (20 Oz. Can) Crushed Pineapple, Undrained
  • 1 cup Shredded Coconut
  • 2 cups Powdered Sugar
  • 4 Tablespoons Pineapple Juice

Directions:

In a large mixing bowl, put in the cake mix and add the pineapple. Beat on medium until the cake mix is completely moistened. ( about 1 minute). Do not grease or flour the pan. You don't have to use a mini angel food pan to make these. There are other options. You can use either a 9x13, traditional Angel Food pan, or the Mini Pan.
Pour batter into 9×13 pan, Angel Food Pan, or Mini Angel Food Pan. If using a mini Angel Food Cake Pan, fill each cup 2/3 full.
Bake at 350 degrees for 30 minutes or until done. Cool on wire rack for 15 minutes. Run knife around edges to remove.

Pineapple Glaze:

Two cups powdered sugar. Add 4 Tablespoons of pineapple juice. Stir until smooth.
 
Assembly:
Spread a couple of Tablespoons on top of each cake, sprinkle with shredded coconut.That's it!!!
