You Call This Meatloaf

1 large rib celery diced

1 medium onion diced

1/2 red bell pepper chopped

1/2 garlic clove minced

1 tsp fresh rosemary chopped

1 tsp fresh thyme chopped

2 Tbs fresh parsley chopped

2 eggs slightly beaten

1 1/2 tsp mustard

1/4 cup ketchup

1 tsp worcestershire sauce

2/3 cups fresh breadcrumbs

1/2 cup of light cream

2 tsp salt

2 lbs ground beef

One handful of Golden Raisins

One handful of Pine Nuts


In large skillet over medium heat, saute the celery, onion and pepper until translucent, approx 5 minutes. Add the garlic, rosemary, thyme and parsley. Saute for an additional 2 minutes. Remove this vegetable mixture and let cool.

In a large bowl add the eggs, mustard, ketchup, Worcestershire sauce, salt, cream. Gently add the bread crumbs, raisins and pine nuts. Now add in the cooled veggie mixture and the ground beef. Gently mix with your fingertips.

Grease one large loaf pan or 4 mini loaf pans. If using mini loaf pans, divide evenly.

Bake at 350 degrees for approx 45 minutes.
