Healthy Oat Bran Muffins with Blueberry, Banana ,Carrot & Walnuts

Ingredients:

3/4 Cup Whole Wheat Pastry Flour

3/4 Cup Oat Bran Cereal ( Bob's Red Mill)

1 tsp. Baking Powder

1 tsp Cinnamon

1/2 tsp Baking Soda

1 Large Ripe Banana Mashed

1/2 Cup Sour Cream

1 Large Whole Egg

2 Tbsp. Cooking Oil

1/2 tsp. Vanilla

1/2 Cup Carrots, shredded

1/2 Cup Walnuts Chopped

1/2 Cup Blueberries

Directions:


Mix all dry ingredients together in large bowl.
  In a separate bowl mix together the liquid ingredients.
  Combine the two bowls and stir until moist. 
Fold in carrots, walnuts and blueberries.
  Grease a 12 cup muffins tin.
  Fill each cup 2/3 full. 
Bake at 400 degrees for 18-20 minutes.
