I think I was maybe 8 or 9 years old when I started helping out in the kitchen, but I can't remeber exactly how old.  And my favorite time to help was when my older sister, Julie, was making chocolate chip cookies (I liked to sneak a few).  But once I got older, I enjoyed being in the kitchen because I just loved being able to prepare things that put smiles on people's faces. 

What you will find on my website is an array of different recipes.  Some of the recipes are ones that I created when I saw another recipes.  Some of the recipes are recipes that have been passed down to my mother from my grandmother.  These recipes will be under the title, Shackhouse Cookin'.  Please check back regularly, because I will continue to post my recipes and featured recipes that I find online.  Buen Provecho!


Featured Recipe-

My featured recipe is Emeril's Favorite Potato Salad.  I saw Emeril prepare this recipe on The Essence of Emeril.  Potato salad is a comfort food for me.  It is great to have with BBQ, which we love here in Texas.  What I love about this recipe is the fact that it is made with Ranch dressing instead of mayo.  Plus, red potatoes are used with the skin on, which add color to the potato salad.

Emeril's Favorite Potato Salad

About 2½ lbs of red potatoes, scrubbed well

6 slices of crisp cooked bacon, crumbled

6 hard boiled eggs, roughly chopped

¼ cup finely chopped red onion

¼ cup finely chopped celery

1 cup Ranch dressing

2 T chopped parsley leaves

1 tsp salt

½ tsp black pepper

Place potatoes in a medium saucepan and cover with water by 1 inch.  Bring to a boil over high heat and cook until the potatoes are tender, about 15 to 20 minutes.  Drain and cool the potatoes.  Then cut them into ½ inch cubes.  In a large mixing bowl, combine the potatoes and all the remaining ingredients.  Gently toss to coat the potatoes with the mixture.  Refrigerate the salad for several hours to allow the flavors to combine.
