Sausage and Potato Egg Pie

  • 8oz Sweet Italian Sausage
  • Olive oil for frying
  • 10oz spinach, washed
  • 1 small onion, diced
  • 1 large potato, washed but not peeled, thinly sliced
  • 1 green pepper, diced
  • 6 eggs
  • 1/2 cup thick cream
  • 1 tablespoon cumin seeds, briefly toasted in a dry pan
  • salt and freshly ground pepper
  • 1 ball buffalo mozzarella
  1. Heat a little bit of olive oil in a large skillet.  Brown sausage.  When sausage is fully cooked remove from pan and drain on a paper towel.
  2. In the same pan cook spinach on high heat.  Fold cooked spinach at the bottom of the pan over the uncooked leaves on the top.  Transfer to a colander in the sink to drain.
  3. Heat a bit more olive oil in the skillet.  Add onion, potato, and green onion.  Cook half covered with a lid for approximately 10 minutes on medium heat.  Turn occasionally. 
  4. Remove lid and turn up the heat, allowing the potatoes to become crispy on the edges.
  5. Preheat the broiler.
  6. Beat eggs with cream, cumin seeds, salt, and pepper.  Pour over the veggie mixture in the pan.  Shake pan back and forth in order for the egg to spread evenly.
  7. Spread spinach and sausage on the egg.  Cover with mozzarella chunks.
  8. Put omelette under the broiler in the oven and cook until done.  Approximately 10-15 minutes.
  9. Serve in thick wedges.
