Gazpacho

Makes: 8-10 servings   Prep Time: 15 minutes   Cook Time: None!   Total Time: 15 minutes + 1 hour chill time

Ingredients:

2 cloves garlic, minced 

1 large zucchini, diced

1 large cucumber, diced

2 stalks celery, diced

1 red onion, diced

5-6 roma tomatoes, diced

dash of salt

dash of pepper

32 ounces tomato juice

1/4 cup olive oil

1/8 cup vinegar -- I used apple cider vinegar but any will do!

2 teaspoons sugar

6 dashes tabasco

optional seasonings: garlic powder, dill, 21 seasoning salute (from trader joes)

optional toppings: cilantro, avocado, sour cream

Directions:
  1. After chopping all of your veggies, combine the minced garlic, half of the zucchini, half of the cucumber, half of the celery, half of the red onion, half of the tomatoes, a dash of salt and pepper, half of the tomato juice, olive oil, vinegar, sugar, and tabasco in a food processor and pulse until all of the ingredients are well blended.
  2. Pour mixture into a large bowl and add the rest of the veggies and the rest of the tomato juice.  Stir to combine and test the seasoning.  This is where I added garlic powder, dill, and the 21 seasoning salute but feel free to add whatever seasoning your taste buds will like!
  3. Chill for an hour and serve cold topped with cilantro and/or avocado and or/sour cream.
  4. Enjoy!
