Strawberry Quinoa Sushi

Ingredients:

Sushi

  • 75g quinoa
  • 150ml coconut milk
  • 2 tablespoons coconut blossom sugar
  • 1/2 vanilla bean (scratched out)
  • 1 heaped tablespoon peanut butter
  • 100g strawberries

Preparation:

Sushi
Step 1Wash quinoa under hot water . Place the washed quinoa in a pot with the coconut milk, the coconut blossom sugar and vanilla and bring to a boil. Simmer on low heat for about 20-25 minutes . ( Until the liquid is completely absorbed by the quinoa )
Step 2Cooked quinoa should cool out completely. Stir in the peanut butter and place the mass on a bamboo mat, lined with clingfilm.
Spread evenly. (25x25cm)
Decoration
Step 3Wash and dry the strawberries and cut into very thin slices.
Sushi
Step 4Spread the strawberry sclices to about 1/4 on the quinoa. Spread the chopped chocolate on the strawberries.
Closely roll the bamboo mat with the clingfilm to a tight sushi roll.

Step 5Refrigerate the sushi roll for at least 45 minutes.
Decoration
Step 6Spread the seeds topping on a flat plate .

Step 7Remove the sushi from the cling film and the bamboo mat and cut with a sharp knife into rolls. (2cm)
Decoration
Step 8Roll the individual sushi rolls in the seeds topping, until the sides are well covered . Finally, decorate with mint leaves and enjoy.
