Romanesco Broccolie Pizza



  • 1 small Romanesco Broccolie (600g)
  • 1 egg  (size L)
  • 50g grated cheese
  • 1 teaspoon salt


  • 150g cream cheese with herbs
  • 1 red onion
  • 2 tomatoes
  • 50g grated cheese
  • 100g salad 

flavored oil

  • 1 garlic clove
  • 50ml olive oil
  • 1/2 teaspoon italien herbs


Step 1
Preheat oven to 400°F. Line 2 baking sheets with baking paper and set aside.
Wash Romanesco and cut of florets. Add Romanesco florets to a saucepan with steamer and steam until 
firm to the bite.
Step 2
Transfer Romanesco to a food processor and process until "rice" texture.
Add the mass to a clean kitchen towel and squeeze out the liquid.
Be patient and do this a few times, until barely any liquid comes out.
Transfer Romanesco to a bowl, add egg, cheese and salt and mix until well combined.
Step 3
Divide dough into half, transfer to each baking sheet and flatten the Romanesco mixture
with your hands to pizza form.
Bake in the hot oven for about 15 minutes.

Step 4
In the meantime chop garlic and mix with the olive oil and the herbs. Set aside.
Step 5
Cut onions into fine rings. Wash tomatoes and cut into fine slices.
Step 6
Take the crust out of the oven and let cool down for a moment. Spread with cream cheese. 
Top with tomatoes and onions.
Increase oven temperatuer to 450°F. Bake pizza for about 10-15 minutes, until done. 
Step 7
Remove from the oven, let chill for a moment, before you add the top with the salad.
At last sprinkle with the flavored olive oil and enjoy...
