1 1/2 cups couscous (250 g)
6 tablespoons olive oil
1 garlic clove (chopped)
4 tablespoons Ajvar (paprika-vegetable-relish, hot)
salt, pepper for seasoning
a bunch of scallions
juice of a half lemon
8,5 fl oz. water (250 ml)
1 teaspoon salt
Pour water in a large saucepan, add 1 tablespoon olive oil and 1 teaspoon salt and bring to a boil.
Remove from heat.
Stir and pour in couscous. Allow to soak for 2 minutes.
Add 3 tablespoons oil and cook on very low heat for 3 minutes, while stiring with a fork to separate
Set aside. Cut radishes into small cubes and scallions into rings.
Now add 2 more tablespoons oil to the couscous, garlic, ajvar, and lemon juice.
Stir until well combined.
At last carefully add the radishes and the scallions and season with salt and pepper for taste.
