Mediterranean Pan Roasted Potatoes and Asparagus 

(for 4 people) 


800 g green asparagus 

500 g potatoes 

1 large onion 

2 cloves garlic 

1 sprig of thyme 

salt and pepper 

4 tablespoons olive oil 


Cook potatoes al dente in boiling, salted water. (about 8-10 minutes)

Drip off, allow to cool and cut into rough slices. (do not peel) 

Wash asparagus, cut off the woody ends, then cut into large pieces. 

Peel garlic and onion and cut into small cubes. 

Heat olive oil in a large pan. 

Add asparagus, onions and garlic to the pan and fry until golden browned. 

Then add potatoes and thyme and cook for about 10 minutes until all the ingredients 

have a golden brown color. 

Season with salt and pepper, serve and enjoy ...
