Lentils Burger with Sweet Potato Fries and Lime Mayo


Lentils Burger

  • 100g beluga lentils
  • 1 small onion (finely chopped)
  • 1 garlic clove (finely chopped)
  • 2 carrots (coarsly grated)
  • 100g smoked tofu
  • 1/2 bunch mixed herbs (finely chopped)
  • 2 tablespoons olive oil
  • 1 teaspoons salt
  • black pepper, chili (to season)
  • 1 egg (size m)
  • 2 tablespoons bread crumbs
  • oil for frying 

Lime Mayo

  • 8 tablespoons mayo
  • juice of 1/2 lime

Red Cabbage Salad

  • 2 tablespoons brown sugar
  • 2 tablespoons walnut oil
  • 1/2 red cabbage (ca. 750g)
  • juice of 1 lime
  • 2 teaspoons sesame
  • 1 tablespoon dark soy sauce
Sweet Potato Fries

  • 1 big sweet potato
  • oil for frying


  • 4 burger buns (whole grain)


Lentils Burger
Step 1
Wash lentils carefully. Bring lentils with 300ml water to a boil. Let simmer for about 20 minutes, until tender. Drain lentils and set aside.
Step 2
Cut smoked tofu into small cubes. Mix carrots and mixed herbs together.
Heat olive oil in a pan and lightly sauté garlic and onions.
Add tofu and lentils and fry for about 2 minutes.
Step 3
Remove pan from the oven and add the carrots with the tofu-lentils mix.
Let chill. Season with salt, black pepper and chili.
Add the egg and the bread crumbs and stir, until well combined.
Step 4
Puree half of the mass and mix with the remaining tofu-lentils mix.
Form 4 equal burgers with wet hands.
Heat oil in a pan and fry burgers at medium heat, until golden browned.
Flip over burgers carefully, so they don't fall apart.
Step 5
Let burgers drain on a kitchen towel.
Lime Mayo
Step 6
Mix mayo and lime juice and stir well. Refrigerate while preparing
the other steps.
Red Cabbage Salad
Step 7
Remove ugly leaves from the red cabbage. Cut the remaining cabbage into half,
with a sharp knife and cut out the inner stalk. 
Cut out the inner thick rib of each cabbage sheet.

Sweet Potato Fries
Step 8
Peel the sweet potato and cut it into fries.
Heat oil in a saucepan. (saucepan should be filled 1/4 with oil)
Add fries and fry until done.
Step 9
Shredder the red cabbage sheets into fine slices and place in a big bowl. Set aside.
Step 10
Toast sesame in a pan without oil. Add sesame, sugar, walnut oil, lime juice and 
soy sauce to the cabbage and stir well.
Step 11
Refrigerate for about 30 minutes.
Step 12
Cut burger buns into half. Spread with lime mayo.
Top with red cabbage salad, lentils burger, sweet potato fries and enjoy...
