cheesy mashed potato patties


(makes about 10 patties)



Ingredients:

leftover mashed potatoes (about 400 g)

6 scallions, chopped

2 eggs

50 g cheddar cheese, grated


salt and pepper for seasoning


butter for frying


breadcrumbs and 1 egg for coating



Directions:


Combine mashed potatoes, scallions, egg and cheddar 

cheese in a medium bowl.

Season with salt and pepper.


Divide dough into 10 pieces and form to patties.

Coat patties. Turn patties first in egg, than flip in breadcrumbs.

Heat, butter in a frying pan, add patties and fry until bottom is browned and crisp. 

Carefully turn the patties over and cook the second side until brown.


Serve with sour cream and enjoy...
