Breakfast Spinach Feta Cheese Muffins

(makes 12 muffins)

100ml oil
220g whole spelt flour
1 package baking powder
1 teaspoon salt
1/2 red onion, chopped
200g heavy sour cream
2 eggs (size m)
200g sheep milk cheese, cubed
120g spinach (defrosted)


Preheat oven to 355°F. Mix flour with baking powder. In another bowl mix oil, salt,
onions, heavy sour cream, eggs, sheep milk cheese and spinach.
At last add the flour and mix well. 
Transfer dough to paper muffin pans and bake in the hot oven for about 20-30 minutes,
until golden  brown.
