For the crust:

200 g flour

100 g butter or margarine, cold

1 teaspoon brown sugar

1 pinch salt

ca. 70-80 ml cold water

For the filling:

3 tablespoons brown sugar

1 tablespoon lemon juice

1/2 vanilla bean, scratched out

4 medium Nectarines

75 g blueberries

1 whisked egg or 2 tablespoons molten margarine

1 tablespoon brown sugar


Preheat oven to 430°F and line a baking sheet with baking paper.

For the crust:

In a bowl combine flour, butter, sugar and salt. Add water slowly and knead until, 

a smooth dough is formed.

Wrap dough into plastic wrap and refrigerate, for about 30 minutes.

For the filling:

Wash nectarines, remove seeds, cut into slices and place in a bowl.

Also add blueberries, brown sugar, lemon juice and vanilla and mix until well combined.

Refrigerate for about 15 minutes.

Take the dough out of the refrigerator, divide into 3 equal pieces and roll out circles, 

on the baking paper(about 8cm diameter).

Spread the mixture evenly over the dough to within 2 cm of the edge.

Fold the edge of the dough over the filling to create a 2 cm border. 

(pull the dough over the filling and press firmly)

Spread the folded edge with beaten egg and sprinkle with brown sugar.

Bake the galette in the hot oven for about 20-30 minutes until golden brown.

Served warm with a big scoop vanilla ice cream, it tastes like heaven…
