banana bread


250 g whole wheat flour

1 teaspoon baking powder

1 pinch salt

115 g butter, soft

115 g brown sugar

2 eggs

1 vanilla bean, scratched out

3-4 bananas (400 g)


Preheat oven to 350°F. Grease loaf pan and set aside. 

In a medium bowl beat butter, vanilla and brown sugar creamy. (about 2 minutes)

Stir in eggs. Peel bananas, and shred with a fork, add to the butter cream and mix well. 

In a second bowl mix flour, baking powder, salt and transfer to the batter.

Pour batter into the loaf pan and bake in the hot oven for about 45 minutes.

Remove banana bread from oven and let cool down on a wire rack.
