avocado asparagus sandwich

  • 4-6 slices Country bread 
  • 250g Green Asparagus
  • 1 Avocado
  • 2 tablespoons olive oil
  • salt and black pepper for seasoning
  • 1/2 zucchini (about 100g)
  • 1 garlic glove
  • cress
  • lemon juice


  • 75g yogurt
  • 50g mayonnaise
  • 1 garlic glove
Step 1Toast country bread golden brown.
Step 2For the Aioli:
Peel garlic glove and finely chop. Add to a small bowl and stir in mayonnaise and yogurt. 
Step 3Preheat oven to 400°F. Cut off wooden ends of asparagus and put into a casserole dish.
Peel and finely chop the garlic glove, mix with olive oil and drizzle over the asparagus.
Season with salt and black pepper and bake until firm to a bite, for about 10-15 minutes. 
Step 4Cut Avocado in half, peel, sprinkle with lemon juice and cut into thin slices.
Wash zucchini and cut with a spiral cutter into thin spaghetti.
Step 5Spread bread with Aioli, top with Asparagus, Avocado slices, zucchini spaghetti and cress.

If desired drizzle with olive oil and season with salt and black pepper.
