Otbivnii/betki (Russian pork chops)

Ingredients (4 servings)
- 4 boneless pork chops
- 2 eggs
- splash of milk
- 1/3 cup flour
- salt + pepper
- 1T butter

- Whisk eggs with a splash of milk, then add flour, salt and pepper. The consistency should be that of pancake batter so if your batter is too runny, add a bit more flour. Set aside.
- With a meat mallet tenderizer, pound pork chops until very thin. Season with salt and pepper.
- Dip pounded chops into the flour/egg mixture, shaking off excess batter.
- Pan fry in butter/oil over medium heat. About 3 minutes/side.
