Chocolate kartoshka truffles

Based on this recipe - makes 35 truffles

  • 1 cup sugar
  • 1 cup milk (I used 1% with success)
  • 2 sticks butter (1 cup)
  • 3 tablespoons cacao powder, divided
  • 4 cups crushed cookies (I used 2 packages of Trader Joe's Bistro Biscuits)
  • 20 walnut halves (approx. 1.5 ounces)
  • 2 tablespoons rum
  • 1 tablespoon powdered sugar
  • pine nuts (optional)
  • Place cookies and walnuts into a large ziplock bag and crush with a rolling pin (it's fun!)
  • In a medium pot on medium-heat, bring sugar and milk to boil. Add butter and 1 tablespoon of cacao powder, until the butter melts.
  • Take off the heat, add crushed cookies and walnuts, then rum.
  • Refrigerate overnight.
  • The following day, mix remaining 2 tablespoons of cacao powder with 1 tablespoon of powdered sugar.
  • With a medium cookie scoop, scoop dough into balls then shape into little logs. Toss in the cacao powder mixture. Repeat.
  • Decorate truffles with pine nuts to create little potato sprouts. Keep refrigerated.
