Chocolate Caramel Cinnamon Chex

Ingredients -

4 cups Rice Chex Cereal
4 cups Cinnamon Chex Cereal
3/4 cup unsalted butter
1/2 cup packed brown sugar
1 cup light corn syrup
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 3/4 cup semisweet chocolate chips

Directions -

    1.    Preheat the oven to 250°. Coat a large, rimmed baking sheet with cooking spray. Place the Chex cereals in a large mixing bowl.
    2.    Add butter, brown sugar, and corn syrup to a medium saucepan. Over medium heat until mixture reaches 250°, stirring just to combine the ingredients. Remove from heat; stir in baking soda and salt. Stir in chocolate chips until melted.
    3.    Quickly pour over Chex cereal and stir to coat. Transfer cereal to the prepared baking sheet and cook for 45 minutes total, stirring ever 15 minutes. Remove from oven and pour onto another baking sheet lined with wax paper to cool.
