Basic Pasta Dough

You'll need:

2 cups all purpose flour

3 eggs, beaten

1 teaspoon of salt

2 tablespoons of extra virgin olive oil

Cornmeal, for dusting

What to do, what to do...

By hand:

1. Mix the flour and salt together and pour onto a clean surface. Form into a mound. Create a well in the middle of the mound.

2. Add the eggs and olive oil to the middle of the well.

3. With a fork, slowly start beating eggs in the well--incorporate the flour from the edges bit by bit.

4. Mix until it forms a dough, then knead until smooth and elastic (about 10 minutes).

With an electric mixer:

1. Add the flour and salt to the bowl of a mixer with the dough hook attached.

2. Add the eggs, and mix on low. Slowly drizzle in the olive oil.

3. Mix until a dough ball forms.

4. Dump on surface dusted with cornmeal, knead until smooth and elastic.

5. Roll the dough into a thin sheet and cut into desired shape.

6. Cook pasta in boiling, heavily-salted water 3-4 minutes, until al dente.
