Bacon Fried Rice

I freeze my rice leftovers to use in fried rice.

4-6 strips of bacon diced
2 tablespoons vegetable oil (if needed)
3 cloves garlic, minced
1/2 onion, thinly sliced (pole-to-pole to make julienne not onion ring style slices)
1 finely diced carrot
2-4 cups rice
2-4 eggs, beaten
1 cup frozen peas
4 scallions, thinly sliced
3 tablespoons soy sauce, or to taste

It's been said the key to fried rice is frying all your ingredients separately, go ahead if you want but I usually combine it this way:

  1. Cook bacon until almost crispy, remove solids to rest on a plate or paper towel.
  2. Add veggie oil if needed, and saute the garlic and onion for about a minute over high heat.
  3. Add carrots to the stir fry and cook until slightly tender.
  4. Add in rice, let sit enough to get slightly crispy on the edges.
  5. Make a well in the middle of the rice mixture for the eggs, pour in & let cook breaking up into small pieces after the eggs are mostly cooked.
  6. Stir in frozen peas to thaw and scallions to heat through.
  7. Add soy sauce and stir.
