Angel Food Cake

  • 1 1/2 c egg whites
  • 1 T lemon juice
  • 1 t cream of tartar
  • 1 t vanilla
  • 1 T amaretto

  • 3/4 c sugar

  • 1 c sifted flour
  • 3/4 c sugar
  • 1/2t salt
  1. Preheat oven to 350 degrees.
  2. Let egg whites warm up to just under room temperature.
  3. Beat on low speed (speed 2) egg whites, lemon juice, cream of tartar, vanilla, and amaretto until frothy.
  4. While beating, comine flour, 3/4c sugar, and salt - sift together.
  5. Beat on medium-high (speed 8) for 3-5 minutes, or until a soft body forms (no peaks).
  6. Slow speed to medium-low (speed 4) and add in 3/4c white sugar a bit at a time for another 2 minutes.
  7. Slow speed to low (speed 2) add in flour mixture in 4-5 batches.
  8. Remove bowl from mixer and fold over 3-5 times to incorporate any dry matter from the sides.
  9. Bake at 350 for 35 minutes in an UNGREASED 10" tube pan.
