1 cup uncooked Quinoa

2 cups vegetable broth

1 package (12oz) extra firm tofu

2 cups mix vegetable

1/2 tablespoon chopped garlic

2 tablespoons chopped shallot

2 tablespoons soy sauce ( divided)

1/4 teaspoon kosher salt

1/2 teaspoon crushed peppercorns

3 tablespoons olive oil fried tofu and stir fried

Quinoa is a nice substitute.
