Greek Taboule Salad

1 (5.25-ounce) package taboule wheat salad mix, prepared according to package directions

3-4 Roma tomatoes, seeded and chopped

1 medium cucumber, peeled, seeded, and chopped

1/2 medium red onion, finely chopped

1 garlic clove, finely minced

1 cup crumbled feta cheese

1 (6-ounce) package pitted kalamata olives, sliced

1-2 tablespoons chopped fresh parsley

2-3 tablespoons extra virgin olive oil

The juice of 2 lemons

Salt and pepper to taste

Stir together all ingredients until mixed, adjusting the amount of olive oil to make the salad moist but not too wet or oil.  Season to taste.  Chill in refrigerator before serving.  Keep refrigerated.
