Armenian Lentil Soup: 14 servings

From New Recipes from Moosewood Restaurant (1987), page 21.  This book was reissued c. 1999. This works well for large groups, especially as it is non-dairy, veggie, wheat-free, and tasty.
Total time:  an hour and a half, maybe less if you have two people chopping.

3 c brown lentils

3 quarts stock or water
     (or two 1-liter boxes plus water)

8 oz. dried apricots

2 c. chopped onion (8 oz.)

6 T oil

½ t cinnamon

½ t allspice, ground

¼ t cayenne

2 T paprika

1# cubed eggplant (5 cups)

28 oz. can of chopped tomatoes

2 red bell peppers

2 t salt

chopped parsley

chopped fresh mint

~ ¼# parmesan cheese
