Sweet Potato Casserole

This is a holiday favorite at our house!
I love to get sweet potatoes from the farmer's market and especially love finding the deep dark red ones.

3 cups mashed, cooked sweet potatoes
1 cup sugar
1/2 teaspoon salt
2 eggs, beaten
1/3 stick butter, melted or at room temperature
1/2 cup milk
1 teaspoon vanilla

Place all ingredients in a large bowl and mix this until smooth and creamy.
Pour it into a well greased baking dish.


1 cup brown sugar
1 cup chopped toasted pecans
1/3 cup plain flour
1/3 cup of butter, melted or at room temperature

Stir these four ingredients together and sprinkle on top of the sweet potatoes.

Bake at 350 degrees for about 40 minutes.  Should be bubbly and brown on top.
