Tortellini and Green Pea Salad

Vinaigrette Dressing:
4 tsp rice wine vinegar
1 T lemon juice
1-1/2 tsp Dijon mustard
1/2 tsp salt
3 garlic cloves, minced
1/4 tsp salt
1/4 tsp black pepper
1/3 cup olive oil

Whisk all ingredients together to form an emulsion.

1 package Tortellini
1-2 cups fresh or frozen green peas
3-4 T Parsley, chopped
Grated cheese (Romano or Parmesan)

Boil either fresh or dried tortellini until barely tender. Remove pasta from water, and using same water, add peas and cook only for a minute, then drain. Mix with the pasta and the dressing. Add parsley and cheese. Chill well before serving.
