Scalloped Potatoes

2 large potatoes, peeled and thinly sliced
3 T butter, diced
3 T flour
Half-and-Half, a cup or more
Salt & Pepper

Preheat oven to 450F. Spray a 1-quart casserole with cooking spray. Begin layering: sliced potatoes, sprinkle with about a tablespoon of flour; season with salt and pepper; place a few pats of butter. Continue layering until casserole is filled. Pour Half-and-Half over potatoes to about 3/4 full. Place casserole on a tray to catch drippings and place in oven. Bake at 450F for 10 minutes, then reduce temperature to 350F. Continue to bake 45 minutes to an hour, until potatoes are tender and the top is browned. 

This recipe can be made in any size casserole that you'd like; simply increase the quantities of all ingredients.
