Homemade Granola

8 cups regular oats
1 cup walnuts, chopped
1 cup almonds, chopped
1/2 cup pecans, chopped
1/4 cup pistachios, chopped
1 cup honey roasted sunflower kernels
1 cup dry roasted pepitas
1 cup sweetened flaked coconut

Preheat oven to 325F. Line two baking sheets with foil. Combine above ingredients in a large bowl and mix together.

1-1/2 tsp salt
1/2 cup brown sugar
1/4 cup maple syrup
3/4 cup honey
2 T molasses
1 T cinnamon
1 T vanilla
1 cup coconut oil 

Combine above ingredients in a medium saucepan and heat just to a boil. Pour over dry ingredients and stir to coat. Spread mixture on baking sheets.

Bake for 30 minutes, stirring once half-way through. Allow to cool completely.

1 cup dried cranberries
1 cup chocolate chips

When granola has cooled, add above ingredients and stir to mix well. Keep in airtight container, or freeze. Makes about 16 cups.
