Grilled Garlic and Pineapple Guacamole

Cooking spray
12 garlic cloves, peeled
2 jalapenos, seeded
1 small red onion, sliced
1/2 cup fresh pineapple, coarsely chopped
3 avocados, pitted, flesh scooped from skin
2 T lemon juice
1 tsp black pepper
1 tsp salt

Spray a comal with cooking spray. Lay the garlic, jalapenos, and onion and cook, turning as necessary until charred. Remove from comal and put into food processor, along with the pineapple. Pulse until ingredients are coarsely chopped. In a medium bowl, mash avocados with a fork to desired consistency. Add ingredients from the food processor and combine. Add lemon juice, black pepper, and salt. Refrigerate until well chilled. Serve with tortilla chips or use as a garnish for food.
