Baked Oatmeal

2 cup old-fashioned rolled oats (not quick cook)
1/2 cup walnuts, coarsely chopped
1-1/2 tsp ground cinnamon
1 tsp baking powder
1 apple, unpeeled, cored and coarsely chopped
1-1/2 cups dried cranberries
2 cups milk
1/3 cup pure maple syrup
1 egg
3 T butter, melted
2 tsp vanilla

Preheat oven to 375° F. (350° F if using glass baking dish).

In a medium bowl, stir together the oats, walnuts, cinnamon, baking powder, apple, and cranberries. Set aside.

In a separate medium bowl, whisk together the milk, maple syrup, egg, melted butter, and vanilla extract.

Place the oat mixture into an 8" baking dish that has been sprayed with cooking spray. Pour the milk mixture over the top of the oats.

Bake for 35-45 minutes, or until the top is golden brown and the mixture is set. Makes 4-6 servings.
