Grilled Cornish Hens with Kikkoman Teriyaki Mango Salsa


(for cornish hens)
2 cornish hens 
1 cup Kikkoman Teriyaki Sauce 

(for salsa topping)

1/2 red bell pepper, diced
1/2 white onion, diced
1 mango, peeled and diced
1/4 jalapeno pepper, diced
1 avocado, diced
juice of one lime
1 - 10 ounce can of crushed pineapple

1/4 cup of chopped cilantro 
1/2 cup Kikkoman Teriyaki Sauce 


(for cornish hens)

1.  Thaw and spatchcock the Cornish Hens. 

2.  Marinade in 1 cup Kikkoman Teriyaki sauce for at least 4 hours.  

3.  Grill Hens on grill for about 30 minutes - 15 minutes on each side.  

(for salsa topping)

1.  Prep all of the ingredients as directed.  

2.  Put all ingredients into a food processor EXCEPT the Avocado.

3.  Blend until Salsa consistency.  

4.  When ready to serve on Grilled Cornish Hens top the hens with the salsa and then add the chopped avocado.
