Apple and Carrot Slaw Salad Recipe


2 large apples (any kind) cut into matchsticks 
3 uncooked carrots, cut into matchsticks 
1 TBSP of Olive Oil
1 1/2 TBSP fresh lemon juice
1/4 cup green onions chopped
1 tsp sugar

2 oz feta cheese, crumbled 
salt and pepper to taste 


1.  Please the apple matchsticks in a large bowl and toss with the lemon juice.  
2.  Add carrots, onions, oil, sugar, salt, pepper, and feta cheese; toss to mix thoroughly.  

3.  Serve chilled.  I let mine chill in refrigerator for at 30 minutes before serving.  

For you Weight Watcher members - 1 serving yields 3/4 cup of the salad.  2PP per serving!
