1 plum tomato
5 big tomatillos
2 garlic cloves
1 jalapeno or seranno
Simmer first four ingredients for about 5 minutes or until soft. Cool and put in blender with cilantro and salt.
The tomato cuts the tang of the tomatillos and balances this salsa. Using it opened my eyes to a lot of new variations.
I got this recipe from a lady from El Salvador. It's more of a condiment than a chip dipping
salsa. It's fantastic with any Tex-Mex.
