2 cups of wheat bran
1 cup of whole wheat flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1/2 teaspoon of salt
1 egg white
1/2 cup of brown sugar
1/2 cup of vegetable oil
1/2 cup of honey
1 cup of buttermilk (or a little less than 1 cup of milk mixed with 1 tablespoon of white vinegar)
1/2 cup of raisins or currants or any dried fruit you like
1/2 cup of chopped nuts (I use walnuts, almonds, or pecans.)
Preheat oven to 400 degrees F. Place paper liners in a cupcake or muffin tin.
In a large bowl, whisk together until thoroughly combined wheat bran, whole wheat flour, baking powder, baking soda, and salt.
In a medium bowl, whisk together until thoroughly combined the eggs, brown sugar, vegetable oil, and honey.
Add the wet ingredients to the dry ingredients and mix until moistened. Add the buttermilk (or buttermilk substitute above). Mix until combined. Fold in the raisins and nuts if you are using them.
Fill the muffin cups with the batter and bake for about 24 minutes or until a toothpick inserted in the center comes out clean.
