Rum Banana Cake

1 1/4 cup butter, softened

1 cup brown sugar

4 eggs

4 very ripe bananas, mashed

2 tsp vanilla extract

1/2 cup dark rum

3 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp salt

3/4 cup low-fat yoghurt


1. Preheat oven to 350F. Grease a bundt cake mold.

2. Using an electric mixer at medium speed, beat butter and brown sugar until smooth. Add in one egg at a time. Mix well after each addition.

3. Beat in mashed bananas, vanilla and rum.

4. Sift flour, baking soda, baking powder and salt. Gradually fold the dry ingredients into the batter with a rubber spatula.

5. Fold in the yoghurt into the batter.

6. Transfer batter to greased pan. Bake for 60 mins or until it passes the toothpick test. Cool for 15 mins. Serve.
