Pastor Barry's Favorite Chocolate Pie

  • 1 1/4 Cup Sugar
  • 1/4 Cup Cornstarch
  • 1/2 tsp salt
  • 3 squares semi sweet chocolate chopped (3 ounces)
  • 2 12 oz cans evaporated milk
  • 4 egg yolks
  • 3 tbsp butter
  • 2 tsp vanilla
In medium saucepan, combine sugar, cornstarch, salt and chocolate; gradually stir in milk.  Cook and stir over medium heat until thickened and bubbly.  Reduce heat and continue to stir for two minutes.  Remove from heat.  Beat egg yolks slightly, gradually stir 1 cup of hot mixture into yolks.  Return egg mixture to saucepan stirring well and bring to a gentle boil, continue to cook and stir an additional two minutes.  Remove from heat, stir in butter and vanilla.  Pour hot filling into baked crust and top with your favorite meringue.
