1-2 large eggplants
1 lb pork sausage
1/4 cup olive oil
1 white onion
1/2 cup kalamata olives
4-6 tomatoes, diced
whole milk mozzarella (so that it melts nicely)
Throw your diced tomatoes, diced onion, olive oil and olives in
pan and let it simmer. You can add any spices that you want to taste.
Turn your oven to broil. Slice eggplant and brush both sides with olive
oil. Place under the broiler until light brown. Flip them over and add
the tomato sauce, sausage, and cheese. Place them back under the broiler
until the cheese is bubbly.
