Sandwich Recipe

Leftover turkey or sliced turkey from the deli is good in this sandwich. You can omit the cheese and use only turkey. If you’re in a hurry, heat the sandwiches in the microwave. Add a salad to complete this healthy quick meal. This recipe is also a good choice for a diabetic menu.

Turkey French Dips

4 long whole grain rolls, 2 ounces each
8 ounces cooked turkey slices
2 ounces grated (1/2 cup) reduced-fat mozzarella cheese slices
1 package au jus gravy mix

Preheat oven to 400 degrees. Cut rolls lengthwise. Place two ounces turkey and one fourth of the mozzarella cheese on each roll. Wrap each roll in aluminum foil and heat in the oven for 10 minutes. Prepare au jus according to package directions, or add more water to reduce the sodium content. Slice each sandwich in half, diagonally. Serve each with 1/3 cup au jus.

One serving is a good source of fiber.
