Roasted Apple Bacon Brussels Sprouts


2 lbs brussels sprouts, ends trimmed and cut in half

2 red applies of choice (I used Gala), chopped into pieces

5 slices of bacon (nitrate and sugar free), chopped into pieces ~1cm wide

1/3 cup avocado oil

2 TBSP Maple Syrup (omit for Whole30, SCD and GAPS)

2 TBSP Herbes de Pervenche Spice

1/4- 1/2 tsp black pepper (to taste) (omit for AIP) 

1/4- 1/2 tsp sea salt (to taste) - this will depend on how salty your bacon is - I recommend adding this after they are cooked so you can determine how much salt needs to be added


1. Preheat your oven to 400F

2. In a large bowl mix all the ingredients together

3. Spread the ingredients evenly on a baking sheet

4. Bake for 30-35 minutes, until bacon and Brussels sprouts are crisp

5. Remove from the oven and let cool for a few minutes

6. Serve and enjoy!
