Paleo Caramel Apple Oatmeal


1 1/3 cups cashew butter 

1 cup full fat coconut milk 

1/3 cup melted coconut oil 

1 TBSP organic vanilla extract (omit for Whole30) 

2 red apples, washed and chopped (I left the skin on) (I used Gala apples but you can use any red apples)

1 1/2 cups shredded coconut 

Optional: 2-3 TBSP honey or maple syrup (if you want it to be sweeter) - omit for Whole30


1. Place all the ingredients (except the shredded coconut) into your food processor or Vitamix blender and blend until smooth

2. Place a medium pot on the stove

3. Transfer the apple mixture from the blender into the pot

4. Turn onto low heat and bring to a boil 

5. Simmer for ~5 minutes, stirring frequently 

6. Turn off the heat and stir in the shredded coconut

7. Allow to sit for 5-10 minutes

8. Serve and enjoy!
